Ingredients

  • 4 chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  3. Add rice, chicken broth, paprika, salt, and pepper to the skillet. Stir to combine.
  4. Nestle the chicken pieces into the rice mixture, skin-side up. Bring to a slight simmer.
  5. Cover the skillet with a lid or aluminum foil and transfer to the oven.
  6. Bake for 35-40 minutes, or until the chicken is cooked through and the rice is tender.
  7. Stir in frozen peas during the last 5 minutes of baking.
  8. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

For added flavor, marinate the chicken in spices and olive oil for a few hours before cooking. You can substitute the chicken with turkey or tofu for a vegetarian option.
