A delightful apple snack cake that combines the sweetness of apples with warm spices, making it perfect for snacking or dessert.

- 4 oz unsalted butter (room temperature)
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/3 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp ginger
- 1/8 tsp cloves (or allspice)
- 2 cups apples (peeled and small diced)
- 1/3 cup chopped dates
- 1/4 cup confectioners sugar
- 1 tbsp maple syrup
Instructions
- Preheat the oven to 350F/175C. Line a 9×9 inch (23×23 cm) cake pan with parchment paper.
- Cream together the butter and sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix again.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
- Gradually add the dry ingredients to the butter mixture, folding gently with a spatula.
- Fold in the diced apples and chopped dates.
- Pour the batter into the lined pan and smooth the top.
- Bake for approximately 35 minutes, or until a skewer inserted in the middle comes out clean.
- To make the frosting, sift the confectioner’s sugar, mix in the maple syrup until smooth, then drizzle or spread over the cooled cake.
- Cut into pieces and serve.
Notes
Store in an airtight container at room temperature for 3-4 days. Can be frozen for up to three months.
