Ingredients

- 1 pound collard greens, trimmed and chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 celery stalk, chopped
- 1 teaspoon Cajun seasoning
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, and celery. Sauté until softened, about 5 minutes.
- Stir in the Cajun seasoning and cook for another minute.
- Add the diced tomatoes and broth, bringing the mixture to a boil.
- Reduce heat and add the collard greens. Simmer for 30-40 minutes until the greens are tender.
- Season with salt and pepper to taste before serving.
Notes
For deeper flavor, let the mixture simmer longer. Can be made vegan by using vegetable broth. Serve with cornbread or rice.
