Ingredients

- 1 lb chicken breast or thighs, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup green beans, chopped
- 1 cup spinach or kale
- Salt and pepper to taste
- Optional: herbs such as thyme or parsley
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the diced chicken and cook until browned, about 5-7 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the green beans and any optional herbs. Reduce heat and simmer for about 20 minutes.
- Finally, stir in the spinach or kale and cook until wilted. Season with salt and pepper to taste. Serve hot.
Notes
Cut vegetables into uniform sizes for even cooking. Try using homemade chicken broth for a richer flavor. Experiment with different vegetables based on what you have on hand.
