Ingredients

- 2 cups broccoli florets
- 1 cup grated sharp cheddar cheese
- 1 cup low sodium vegetable broth
- 1 cup milk (or a non-dairy alternative)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
- Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Remove from heat and blend the soup until smooth using an immersion blender or regular blender.
- Return to the pot, stir in milk and cheddar cheese until melted and creamy.
- Season with salt and pepper to taste. Serve warm.
Notes
For a creamier texture, you can use a little more cheese or add a potato while cooking. Consider adding herbs like thyme or a pinch of nutmeg for added flavor.
