Description

A delicious and comforting soup that’s low in sodium, healthy, and packed with nutrients from broccoli.


Ingredients

  • 2 cups broccoli florets
  • 1 cup grated sharp cheddar cheese
  • 1 cup low sodium vegetable broth
  • 1 cup milk (or a non-dairy alternative)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
  3. Remove from heat and blend the soup until smooth using an immersion blender or regular blender.
  4. Return to the pot, stir in milk and cheddar cheese until melted and creamy.
  5. Season with salt and pepper to taste. Serve warm.

Notes

For a creamier texture, you can use a little more cheese or add a potato while cooking. Consider adding herbs like thyme or a pinch of nutmeg for added flavor.
