Irresistible Ham and Bacon Potato Soup

Description

A comforting bowl of Ham and Bacon Potato Soup, perfect for cold days and using up leftover ham.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced ham
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped bacon and cook until crispy.
  2. Remove bacon and set aside, leaving drippings in the pot. Add diced ham and onion to the pot and sauté until the onion is translucent.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Stir in heavy cream and season with salt and pepper.
  6. Use an immersion blender to puree the soup to your desired consistency, if desired.
  7. Serve hot, garnished with bacon pieces and chopped green onions.

Notes

For a thicker soup, mash some of the potatoes after cooking. Adjust seasoning to your taste.
