Description
A comforting bowl of Ham and Bacon Potato Soup, perfect for cold days and using up leftover ham.
Ingredients

- 1 tablespoon olive oil
- 1 cup diced ham
- 4 slices bacon, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups diced potatoes
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped bacon and cook until crispy.
- Remove bacon and set aside, leaving drippings in the pot. Add diced ham and onion to the pot and sauté until the onion is translucent.
- Stir in minced garlic and cook for an additional minute.
- Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in heavy cream and season with salt and pepper.
- Use an immersion blender to puree the soup to your desired consistency, if desired.
- Serve hot, garnished with bacon pieces and chopped green onions.
Notes
For a thicker soup, mash some of the potatoes after cooking. Adjust seasoning to your taste.
