Ingredients

- 4 large potatoes, peeled and diced
- 4 slices of bacon, chopped
- 1 onion, diced
- 3 cups chicken broth
- 1 cup sour cream
- Salt and pepper to taste
- Chives for garnish (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Add the diced onions to the pot and sauté until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Use a potato masher to partially mash the soup for a creamier texture, if desired.
- Stir in the sour cream and season with salt and pepper to taste.
- Serve hot, topped with crispy bacon and chives if desired.
Notes
For extra flavor, try adding garlic when sautéing the onions. You can also mix in other vegetables like carrots or celery.
