A hearty and flavorful chili made in the crockpot without tomatoes, perfect for chilly evenings or game day gatherings.


Ingredients

  • 1 pound ground beef (or substitute with turkey)
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups beef broth (or vegetable broth)

Instructions

  1. In a skillet, brown the ground beef over medium heat, then drain excess fat.
  2. Transfer the browned beef to the crockpot.
  3. Add the kidney beans, black beans, corn, bell pepper, onion, and garlic to the crockpot.
  4. Stir in the chili powder, cumin, paprika, salt, and pepper.
  5. Pour in the beef broth and mix everything well.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Serve hot and enjoy your hearty chili!

Notes

For best results, let the chili cook on low. You can also adjust the spices to suit your taste or try adding more vegetables.
