A comforting one-pot soup that combines the flavors of traditional lasagna with tender chicken and creamy textures.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 oz) crushed tomatoes
  • 1 cup heavy cream
  • 8 oz lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the onion and garlic; sauté until the onion is translucent.
  3. Stir in the shredded chicken, chicken broth, crushed tomatoes, and Italian seasoning.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Reduce heat and simmer for about 15-20 minutes, or until the noodles are tender.
  6. Stir in the heavy cream, mozzarella, and Parmesan cheese.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.

Notes

For extra creaminess, increase the amount of heavy cream or cheese. Feel free to mix in vegetables like spinach or zucchini.
