- 2 cups cooked shredded chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 oz) crushed tomatoes
- 1 cup heavy cream
- 8 oz lasagna noodles, broken into pieces
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion and garlic; sauté until the onion is translucent.
- Stir in the shredded chicken, chicken broth, crushed tomatoes, and Italian seasoning.
- Bring to a boil, then add the broken lasagna noodles.
- Reduce heat and simmer for about 15-20 minutes, or until the noodles are tender.
- Stir in the heavy cream, mozzarella, and Parmesan cheese.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
For extra creaminess, increase the amount of heavy cream or cheese. Feel free to mix in vegetables like spinach or zucchini.
