- 2 cloves garlic, minced

- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and ginger, and stir for about 1 minute until fragrant.
- Add the mixed vegetables and stir-fry for another 4-5 minutes until they’re tender but still crisp.
- Pour in the soy sauce and mix everything together, cooking for an additional 2 minutes.
- Serve over cooked rice or noodles.
