Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, broccoli, and carrots)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  4. Add minced garlic and ginger, and stir for about 1 minute until fragrant.
  5. Add the mixed vegetables and stir-fry for another 4-5 minutes until they’re tender but still crisp.
  6. Pour in the soy sauce and mix everything together, cooking for an additional 2 minutes.
  7. Serve over cooked rice or noodles.
