  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: additional cheddar cheese, croutons

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until onions are translucent.
  2. Add broccoli florets and cook for a few minutes.
  3. Sprinkle flour over the vegetables and stir to coat.
  4. Gradually add the low sodium vegetable broth while stirring, bringing the mixture to a simmer.
  5. Once the broccoli is tender, use an immersion blender to blend the soup to your desired consistency.
  6. Stir in the milk and shredded cheddar cheese, cooking until the cheese is melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, optionally topped with additional cheddar cheese or croutons.

Notes
